Once the Franconian wine has fermented and the yeast has converted the fruit sugar into alcohol, the wine is carefully separated from the yeast. The yeast is then distilled. Our principle is that only good wine makes a good yeast brandy. Only after several years of aging does the distillate develop its balanced aroma.
